Paleo Chocolate Chip Cookies

They really are pretty much as quick and easy as that, another reason to just love them! Allow these cookies to cool completely on the baking sheet after baking, but we can’t wait to enjoy them too long so that’s usually only about 15 minutes.

Delicious and flavorful Paleo Chocolate Chip Cookies that are gluten free and vegan as well!
- 2 cups almond flour
- 1/2 cup coconut oil
- 1/8 cup maple syrup
- 1 tsp almond extract
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup chocolate chips (milk chocolate or dark chocolate)
Preheat your oven to 350 degrees F (175 degrees C) and line your baking sheet with parchment paper.
In a medium mixing bowl, or the bowl of your stand mixer, combine all of the ingredients except for the chocolate chips: almond flour, coconut oil, maple syrup, almond and vanilla extracts (or use 1 tsp either almond or vanilla extract), baking soda, baking powder, and salt.
Add chocolate chips and stir to combine until the chocolate chips are evenly distributed. Drop the cookie dough in heaping teaspoonfuls onto the parchment paper lined baking sheet about 2 inches apart.
Bake at 350 degrees F (175 degrees C) for 10-12 minutes, or until nicely browned around the edges. Remove from the oven and allow to cool completely on the baking sheet as cookies will be crumbly while warm.
